Tis the season for those hardy dishes that you can curl up under a blanket and indulge in. A good pot of chili is not only perfect for cooler weather but is also great for larger families and budget friendly.

If you're short on time and spices you can opt to use a ready made spice blend like a McCormick's Chili Seasoning pack but I prefer to make my own to control the level of flavor.

This recipe yields about 8-10 servings of chili.

 

 

Chili

  • Two cans of kidney beans (or bean of choice)
  • Two cans of Tomato Sauce
  • 2lbs of ground beef
  • Onion
  • Green peppers
  • Red Peppers
  • Water
  • Chili Seasoning
  • Chili Pepper Seasoning
  • Smoked Paprika
  • Cumin
  • Salt
  • Black pepper
  • Onion Powder
  • Garlic Powder
  • Italian Seasoning

Brown meat then remove from pan and sauté onions and peppers. combine all ingredients into slow cooker and cook on high for 4 hours.

Cornbread

  • 1 cup all-purpose flour
  • 1 cup yellow cornmeal
  • ½ cup white sugar
  • 1 teaspoon salt
  • 3 teaspoons baking powder
  • 1 egg
  • 1 cup milk
  • 1/3 cup salted butter 

Pre-heat oven to 375 degrees. For cornbread bowl I used 14oz Porcelain Ramekins from Target. pour batter in ramekins and bake for about 25-30 minutes. Once done, and cooled off some, carefully carve out the center and fill with chili. Top with your favorites like cheese, sour cream, green onions and enjoy!
