Sample Recipe: Fish Tacos

Preheat oven to 375 degrees.

Ingredients

  • 10-20 small corn tortillas
  • 1 1/2 lb cod/haddock/rockfish
  • 2-3 TSP HK Latin Spice
  • 1 TSP salt
  • 1 TBSP Olive oil
  • 1-2 TBSP unsalted butter

Instructions

  1. Line baking sheet with parchment paper
  2. Drizzle each piece of fish with olive oil
  3. Sprinkle generous amount of HK Latin spice on each piece
  4. Dot each piece of fish with butter
  5. Bake for 20-25 minutes
  6. To brown edges, broil for 3-5 minutes
  7. Warm each tortilla in dry skillet, griddle or oven

Sample Recipe: Enchiladas with Masa Harina Crepes

Preheat oven to 375 degrees.

Filling Ingredients

  • 3 tablespoons oil
  • 1 cup red onion, diced
  • 1 red pepper, julienne cut
  • 1 green pepper, julienne cut
  • 1 (15oz) can black beans, rinsed and drained
  • 1 cup corn (fresh/frozen/canned)
  • 1 (15oz) can chopped tomatoes
  • 1 lb shredded roasted chicken
  • 11/4cup cheddar cheese
  • 11/4 cup Monterey Jack cheese

Instructions

  1. Add oil to large skillet
  2. Sauté onions for 3 - 5 minutes over medium heat
  3. Add peppers, beans and diced tomatoes
  4. Cook veggies and beans for a few minutes
  5. Remove from stove and let cool
  6. Prepare enchiladas crepes
  7. Fill each crepe with chicken filling and a sprinkle of cheese
  8. Lay each crepe seam side down in pan
  9. Continue filling all crepes lining each, side by side
  10. Pour enchilada sauce over crepes
  11. Sprinkle rest of cheese on top
  12. Bake in the oven for 20 - 25 minutes or until cheese hasmelted
  13. Remove from oven and let sit for 10 - 15 minutes
  14. Garnish with scallions

Sample Recipe: Lamb Meatballs

Preheat oven to 400 degrees.

Ingredients

  • 1 pound ground lamb
  • 1 large egg
  • 1/4 cup panko
  • ¼ cup feta cheese, crumbled
  • Juice of 1 lemon
  • 1 TBSP Sultan's Spice
  • 1-2 TSP mint, chopped

Instructions

  1. Whisk egg and spices in medium bowl
  2. Add rest of the ingredients and mix with spoon or hands. Do not overmix.
  3. Form into golfball-sized meatballs
  4. Place on cookie sheet
  5. Bake for 14-20 minutes
  6. Remove and serve with couscous or pita and tomato/cucumber salad

Sample Recipe: Mediterranean Chicken Florentine with Cavatelli Pasta

Chicken Ingredients

  • 1 lb chicken breasts, pounded
  • 2 TBSP HK Mediterranean Spice
  • 1 cup HK Masa Flour
  • 4 TBSP grated Parmesan Cheese
  • 1 TBSP butter
  • 1 TBSP oil+

Sauce ingredients

  • 2 TBSP butter
  • 1-2 garlic cloves, diced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 TBSP HK Masa Flour
  • 1 TSP HK Mediterranean Spice
  • 1/4 TSP salt
  • 1/4 tsp freshly ground pepper
  • 1/2 cup freshly grated Parmesan cheese
  • 1 cup chopped fresh spinach, stems removed

Instructions

  1. Prepare Cavatelli as prepared on package
  2. On cutting board, pound out each breast
  3. Drizzle each side with olive oil
  4. In large shallow bowl or plate whisk HK Masa, HK spices,Parmesan cheese
  5. Coat each side of chicken breast with a generous amount of the flour mixture
  6. Over medium heat melt butter and add oil to large skillet
  7. Once hot, place chicken and cook on each side for 4-5minutes, depending on thickness
  8. Once cooked remove from pan and let rest on plate
  9. In same skillet add butter and sauté garlic for 3 minutes
  10. Whisk in seasoning and broth
  11. Turn heat to high medium and whisk in HK Masa flour andcream
  12. Continue to whisk until mixture thickens, adding cheese
  13. Once mixture is blended, turn heat down to low and addspinach
  14. Add chicken and continue cooking for 3-5 minutes
  15. Garnish with additional grated cheese
  16. Serve & enjoy with Cavatelli pasta and side salad
