Buffalo Favorite, Sponge Candy…With A Different Twist
Buffalo is known for sponge candy, and it's a favorite item to send to friends and relatives across the U.S. We're used to the sponge candy squares sold by most candy confectioners in the area, but one shop does it a bit differently.
The Park Edge Sweet Shoppe has perfected the process of making the sponge candy with a twist.
Co-owner Maggie Mulvany told NEWS 4 (WIVB-TV) the main ingredients as sugar, water, corn syrup, gelatin along some elbow grease for stirring, and while it takes no time to eat it, the process to make it takes about 24 hours.
“It’s definitely an arm workout, we do everything by hand so everything is handsaws, and every piece is literally hand cuts and we do shapes for the holidays,” said Mulvany.
We said The Park Edge’s sponge candy is unique in the Buffalo area, and the reason for that is its shape. Most sponge candy comes in little square blocks...
“We do our sponge candy a little bit different than everyone else. We make the sticks, we’re home of the original sponge candy sticks. So instead of a square, that’s a little clumsy to eat, we make it in a stick. It has a better chocolate to sponge ratio,” said Anna Hartog, co-owner.
Sales at the shop were brisk for the Valentine's Day holiday, but if this post has your mouth watering, never fear, the process is ongoing, so you won't be left wanting.
