Growing up my mother had a cookbook entitled "365 Ways to Cook Chicken" and it stuck out to me because although I love chicken, I couldn't imagine it being so many different ways to serve it up. Today, I know there's probably even more ways to cook a chicken than 365 and stuffed chicken is amongst my top 10! I seen this recipe for Broccoli & Cheddar stuffed chicken while scrolling Instagram so I had to try it! Of course I did a couple of things different and overall it came out amazing and is now one of my favorite dishes. Not only is it super flavorful and filling, but it's also pretty quick and easy to make! Check out the recipe below and let us know what you think!

Broccoli & Cheddar Filling

  • Freshly steamed and chopped broccoli
  • Softened Cream Cheese
  • Shredded Cheddar
  • Shredded Mozzarella (optional)
  • Green & Red Peppers
  • Onions
  • Minced Garlic
  • Paprika
  • Onion Powder
  • Garlic Powder
  • Lawry's Seasoned Salt
  • Ground Pepper

Combine all ingredients, mix well.

Whole Chicken Breasts

Slice a pocket into chicken breasts. Coat with olive oil and season inside and outside to taste. Add slices of butter in side then stuff with filling. Add a slice of butter to the tops and use a toothpick to help keep chicken breasts closed.

Cook covered for 15 minutes on 400 degrees then uncover and cook for an additional 20. Broil on High for about another 5-7 minutes to get it crispy.
